Ingredients

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup sugar

For the filling:

16 oz (2 packages) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

For the topping:

1 can (21 oz) cherry pie filling (or fresh cherries if preferred)

Instructions

  1. Make the crust:
    • In a bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
    • Press the mixture into the bottom of a 9-inch springform pan. Use the back of a measuring cup to pack it tightly.
    • Refrigerate while preparing the filling.
  2. Prepare the filling:
    • In a large bowl, beat the softened cream cheese with an electric mixer until smooth.
    • Gradually add powdered sugar and vanilla extract, mixing until fully incorporated.
    • In another bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until combined.
  3. Assemble:
    • Pour the cream cheese filling over the chilled crust and spread evenly.
    • Refrigerate for at least 4 hours, or until set (overnight is best if you can wait!).
  4. Add the topping:
    • Before serving, spread the cherry pie filling over the cheesecake.
  5. Serve:
