Trying a new cookie recipe is always a good idea for me, but this particular delicacy was a no-brainer. Cream cheese cookies with cinnamon. A delightful biscuit combining two of my favorite things.
What's in it?
1/2 cup butter (1 stick), at room temperature
4 oz cream cheese (about half a block), at room temperature
1 1/2 cups powdered sugar
1 egg
1 1/2 tsp vanilla essence
1 3/4 cups flour
1/4 tsp baking powder
1/4 tsp salt
1/4 cup granulated sugar
1 tbsp cinnamon
Instructions:
In a large bowl, beat together the cream cheese and butter until smooth and light.
Gradually add powdered sugar and mix well.
Blend in the egg and vanilla extract until fully incorporated.
In a small bowl, sift together flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients.
Cover the dough and refrigerate for at least 60 minutes.
Preheat the oven to 375°F (190°C).
In a small bowl, combine cinnamon and sugar.
Scoop and roll the dough into 1-inch balls, then roll the balls in the cinnamon-sugar mixture.
Place the dough balls on a baking sheet, spacing them at least 2 inches apart.
Bake for 8 to 10 minutes until lightly golden.
